Every JD Gourmet bottle starts in Italy. The balsamic behind our fifty-plus flavors is aged in Modena — the only place real balsamic comes from. Our truffles come out of the ground in Umbria, found by working dogs and dug by hand. This is where we go, who we learn from, and why you can taste the difference.
Modena, Emilia-Romagna
Balsamic vinegar isn't a style — it's a place. Real balsamic comes from Modena, Italy, where cooked grape must is aged through generations of wooden casks and the name is protected by law. The depth can't be faked, and it can't be rushed.
That's the base of every JD balsamic. We source it from Modena and barrel-age it for the kind of complexity store-bought "balsamic" — flavored vinegar, balsamic in name only — never touches. Then we blend in real fruit: actual purées and juices, never essences.
Umbria · near Perugia
Most of what's on a store shelf — the supermarket aisle or the pretty little gift shop downtown — has never met the person who made it. Ours has. Every year the family travels to the green heart of Italy — Umbria, near Perugia — to taste, source, and learn.
The best mornings are spent in the oak woods behind Christian and his dog, Spongee. Spongee catches a scent off nothing you could smell, freezes, and digs — and a knot of fragrant black truffle comes up out of the dirt by hand. A real truffle isn't farmed; it's found. That's the difference you taste in our truffle oils, truffle salt, and truffle honey.
Umbria · the mill
Good olive oil is a fresh thing, not a shelf-stable one. In Umbria we watched it run green and cloudy off the press and through the old brass filters — the same unhurried way it's been done for generations.
That's the oil we build on: pressed for flavor, not for yield. It's why our oils taste like the fruit they came from, instead of tasting like nothing at all. It's the standard we hold every bottle to, oil and balsamic both — always fresh, never boring.
Most flavored balsamic is caramel color and artificial flavoring. Ours is made with real fruit, blended in small batches — and once you taste it, you can't go back.
